Preparation
Step 1: Preparing the Ingredients
Start by preparing all your ingredients. Chop the green onions and kimchi, mince the garlic, and slice the pork belly. Cube the tofu and rinse the seafood mix under cold water. Prepare the anchovy broth by boiling dried anchovies with water for about 20 minutes, then straining out the solids.
Step 2: Cooking the Rice
Cook the rice according to package instructions. Once cooked, let it cool so that it does not clump together when stir-frying.
Cooking Process
Step 3: Stir-frying the Ingredients
Heat a large pan over medium-high heat and add sesame oil. Add the minced garlic and stir-fry for 1 minute until fragrant. Add the pork belly slices and cook until they start to crisp up. Then add the kimchi and gochujang and cook for another 2-3 minutes until everything is well combined.
Step 4: Combining Flavors
Add the cooled rice to the pan with a dash of soy sauce and the chopped green onions. Mix thoroughly, ensuring the rice is evenly coated with the sauce and other ingredients.
Step 5: Simmering with Broth
Pour in the prepared anchovy broth and bring the mixture to a simmer. Introduce the seafood mix, tofu cubes, and shredded napa cabbage. Let simmer for 15 to 20 minutes to allow the flavors to meld together.
Step 6: Finishing Touch
Add the sliced lotus root and enoki mushrooms and cook for another 5 minutes. Add a splash of fish sauce, a sprinkle of red pepper flakes, and top with sesame seeds.
