Ingredients
- Lamb - 500g cubed
- Onion - 1 large, finely chopped
- Garlic - 3 cloves, minced
- Tomato Paste - 2 tablespoons
- Red Pepper Flakes - 1 teaspoon
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Chickpeas - 1 can, drained and rinsed
- Bulgur - 1 cup
- Olive Oil - 2 tablespoons
- Salt - to taste
- Black Pepper - to taste
- Fresh Mint - for garnish
Preparation
- Begin by marinating the lamb cubes. In a bowl, mix the lamb with olive oil, cumin, paprika, salt, and black pepper. Let it rest for at least 30 minutes to absorb the flavors.
- Meanwhile, rinse the bulgur under cold water and set aside to soak, allowing it to become tender.
Cooking Process
- Heat a large skillet over medium-high heat and add the marinated lamb. Cook until the meat is browned on all sides, approximately 5-7 minutes.
- Remove the lamb from the skillet and set aside.
- In the same skillet, add more olive oil if needed, then sauté the onion until translucent, about 5 minutes. Add the garlic and cook for another minute until fragrant.
- Stir in the tomato paste, red pepper flakes, and return the lamb to the skillet. Mix well to coat everything evenly.
- Next, add the chickpeas to the mixture. Pour in about 1 cup of water, bring to a boil, then reduce the heat and let it simmer for about 20 minutes or until the lamb is tender.
- Drain any excess liquid from the soaked bulgur and add it to the skillet, stirring to combine with the other ingredients.
- Cover the skillet and allow it to simmer on low heat for another 10-15 minutes, ensuring all flavors meld together and the bulgur is fully cooked.
