Izmir Lokma Sarması
Background and History
Izmir Lokma Sarması is a traditional Turkish dessert hailing from Izmir, a city renowned for its rich culinary heritage and bustling street food scene. This sweet confection is a type of Lokma, a doughnut-like treat, which is deep-fried and then soaked in sugary syrup. Originally served as a gesture of goodwill during communal events or religious gatherings, Izmir Lokma Sarması has transcended its traditional roots to become a beloved delicacy enjoyed by many around the world. The word 'Lokma' is derived from the Arabic word 'luqma,' meaning 'mouthful' or 'morsel.' Its history dates back to the Ottoman Empire, where it was considered a dessert fit for the sultans.
Ingredients
- Flour - 500g
- Yeast - 10g
- Sugar - 200g
- Water - 350ml
- Oil for frying - 500ml
- Lemon juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Cinnamon for sprinkling (optional) - to taste
Preparation
Preparing the Dough
Begin by combining the flour, yeast, 1 tablespoon of sugar, and salt in a large mixing bowl. Gradually add the water, mixing continuously until a smooth, elastic dough forms. Cover the bowl with a damp cloth and allow the dough to rise for around one hour in a warm environment until it doubles in size.
Preparing the Syrup
While the dough is rising, prepare the syrup by combining the remaining sugar with 200ml of water in a saucepan. Bring the mixture to a boil over medium heat, allowing it to simmer for 10 minutes. Remove it from the heat and stir in the lemon juice. Set the syrup aside to cool.
Cooking Process
Once the dough has risen, heat the oil in a deep frying pan to 180°C (350°F). To shape the Lokma, wet your hands for easier handling and take small portions of the dough, rolling them into balls. Carefully drop them into the hot oil, frying until each is golden brown and crispy, approximately 3-5 minutes per batch. Use a slotted spoon to transfer the Lokma onto paper towels to drain excess oil.
Next, plunge the fried Lokma into the syrup for about two minutes to allow them to soak up the sweetness, ensuring each piece is well coated. If desired, sprinkle cinnamon over the top for an added layer of flavor.
