Jalisco Empanadas
Introduction

Ingredients
- All-purpose flour - 2 cups
- Butter - 1/2 cup, chilled and cubed

- Cumin - 1 teaspoon

- Tomato paste - 2 tablespoons
- Green chilies - 1/4 cup, chopped
- Olive oil - 2 tablespoons
- Egg - 1, beaten (for egg wash)
Preparation
Preparing the Dough
- In a large mixing bowl, combine flour and salt.
- Add chilled butter cubes and mix using a pastry blender or your hands until the mixture resembles coarse crumbs.
- Add water gradually, mixing until the dough begins to hold together.
- Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
Cooking the Filling
- In a skillet, heat olive oil over medium heat.
- Add onion and sauté until translucent.
- Add garlic, cumin, chili powder, and oregano, and cook for an additional 2 minutes.
- Stir in shredded pork or beef, tomato paste, and green chilies.
- Cook until the mixture is well combined and heated through. Remove from heat and let it cool.
Assembling and Cooking the Empanadas
- Preheat your oven to 400°F (200°C).
- Roll out the chilled dough on a lightly floured surface to about 1/8 inch thick.
- Cut out circles using a pastry cutter or glass, approximately 4-5 inches in diameter.
- Place a spoonful of the meat filling in the center of each circle.
- Brush the edges with water and fold the dough over the filling to create a half-moon shape. Seal the edges by pressing with a fork.
- Place the empanadas on a baking sheet lined with parchment paper.
- Brush the tops with beaten egg for a golden finish.
- Bake in the preheated oven for about 20-25 minutes or until the empanadas are golden brown.
