- Cornstarch - 1 tablespoon
- Sugar - 1 teaspoon
- White Pepper - 1/2 teaspoon

Preparation
Marinating the Chicken
1. Begin by slicing the chicken breast into thin strips. This allows them to cook evenly and absorb the flavors of the marinade.
2. In a large bowl, combine soy sauce, oyster sauce, rice wine, ginger, and garlic. Add the chicken strips and toss well to coat. Cover and let it marinate in the refrigerator for at least 30 minutes.
Preparing the Vegetables
While the chicken marinates, wash and prepare the bok choy by trimming the ends and cutting them into bite-sized pieces. Slice the shiitake mushrooms and chop the green onions.
Cooking Process
Sautéing the Chicken
1. Heat a wok or large frying pan over medium-high heat and add half of the sesame oil.
2. Add the marinated chicken strips and stir-fry until they are fully cooked and slightly golden brown. Remove from the wok and set aside.
Stir-frying the Vegetables
1. In the same wok, add the remaining sesame oil and stir-fry the shiitake mushrooms till tender.
2. Add the bok choy and sauté for a few minutes until the leaves are wilted and stems are tender.
3. Return the chicken to the wok, and mix in the vegetables thoroughly.
Final Touches
1. Mix the cornstarch with a bit of cold water to create a slurry, then pour it into the wok for thickening the sauce.
2. Add sugar, a pinch of white pepper, and salt to taste. Stir well to combine.
