Ingredients
- Flour - 3 cups
- Water - 1 cup (for dough)
- Salt - 1 tablespoon (for dough)
- Beef - 1 pound, sliced (for filling)
- Onion - 1, sliced
- Garlic - 2 cloves, minced
- Carrot - 1, grated
- Cabbage - 1/2, shredded
- Black Pepper - 1 teaspoon
- Cooking Oil - 2 tablespoons
- Butter - 2 tablespoons (for the dough and cooking)
- Water - 1 cup (for steaming)
- Sour Cream - For serving
- Parsley - For garnish
Preparation
Step 1: Preparing the Dough
- In a large mixing bowl, combine flour and salt. Gradually add water until a smooth, elastic dough forms. Knead for 10 minutes.
- Cover the dough with a damp cloth and let it rest for 30 minutes. This helps the gluten develop, making the dough easier to roll out.
Step 2: Preparing the Filling
- Heat cooking oil in a pan over medium-high heat. Add onion and garlic, sautéing until fragrant and golden.
- Add the beef slices, cooking until browned and tender. Season with black pepper.
- Stir in carrot and cabbage. Cook until the vegetables are soft, approximately 10 minutes.
- Once cooked, remove from heat and allow to cool slightly.
Cooking Process
Step 1: Rolling Out the Dough
- Divide the dough into equal portions and roll each piece into a thin round sheet, about 8-10 inches in diameter.
- Melt butter and brush one side of each dough sheet.
Step 2: Assembling the Kystybai
- Place a generous spoonful of the beef and vegetable filling onto one half of each dough sheet.
- Fold the other half over the filling, pressing the edges to seal shut like a turnover.
Step 3: Cooking the Kystybai
- In a large skillet, melt a tablespoon of butter over medium heat. Place the kystybai seam-side down into the pan.
- Cook until golden brown and crisp on each side, approximately 4 minutes per side. Ensure the filling is heated through by covering the pan with a lid.
- Add water to the pan for steaming if necessary.
Step 4: Serving
- Once cooked, remove the kystybai from the skillet. Allow to cool slightly before serving.
- Serve hot, garnished with parsley and a dollop of sour cream on the side.
