- Celery: 2 sticks of celery, chopped
- Flour: 50g plain flour for thickening
- Fish Stock: 500ml fish stock, preferably homemade
- Parsley: a handful of fresh flat-leaf parsley, chopped
- Lemon: Zest of 1 lemon for garnish
- Salt and Pepper to taste
Preparation
Potatoes: Begin by peeling and quartering the potatoes. Place them in a large pot of salted water, bringing it to a boil. Reduce the heat and simmer until tender. Drain the water and return the potatoes to the pot.
Mash the potatoes using a ricer or masher, slowly incorporating milk and butter until smooth. Season with salt and pepper to taste, then set aside.
Preheat your oven to 200°C (392°F) to get ready for the cooking phase.
Cooking Process
Heat some butter in a large pan over medium heat. Add onion, garlic, carrot, and celery. Cook until softened.
