Kpekpé
Description and History of Kpekpé
Kpekpé is a traditional African dish originating from the Kwahu region of Ghana. Known for its rich, savory flavors and aromatic spices, this dish is a testament to the culinary ingenuity of Ghanaian cuisine. Passed down through generations, Kpekpé is often prepared during special occasions and festivals among the Kwahu people, symbolizing unity and celebration. The main ingredients used to prepare this dish include cornmeal, peanut butter, and spices, making it not only flavorful but also nutritious and filling.
Ingredients
- Cornmeal - 3 cups
- Peanut Butter - 1 cup
- Chicken - 1 pound, cut into pieces
- Onions - 2 medium, chopped
- Tomatoes - 3 large, diced
- Ginger - 2 teaspoons, grated
- Garlic - 4 cloves, minced
- Chili Powder - 1 teaspoon
- Salt - to taste
- Water - 4 cups
- Vegetable Oil - 2 tablespoons
Preparation
- Begin by preparing the chicken. Wash the pieces thoroughly and season them with salt and 1 teaspoon of ginger and garlic.
- In a large saucepan, heat the vegetable oil over medium heat and sear the seasoned chicken pieces until they are browned on all sides. This should take about 5-7 minutes. Remove the chicken and set aside.
- In the same saucepan, add the onions and sauté until translucent. Add the remaining ginger and garlic, and cook for another 2 minutes until fragrant.
- Add the tomatoes and chili powder to the pan, and cook until the tomatoes break down into a sauce.
- Return the seared chicken to the saucepan, along with any juices that have collected, and stir in the mixture.
- Pour in 3 cups of water and bring the mixture to a boil. Once boiling, reduce the heat to a simmer and cover the saucepan. Allow it to simmer for about 30 minutes or until the chicken is cooked through and tender.
Cooking Process
- As the chicken simmers, prepare the cornmeal base. In a separate pot, bring 1 cup of water to a boil.
- Slowly add the 3 cups of cornmeal to the boiling water, stirring constantly to prevent lumps from forming. Reduce the heat to low.
- Continue to stir the cornmeal mixture over low heat until it thickens and becomes smooth. This should take about 10-15 minutes.
- Remove the pot from the heat and stir in the 1 cup of peanut butter until it is fully incorporated and the mixture is smooth.
- Check the chicken mixture, ensuring it is well-simmered and seasoned to taste. Adjust seasoning if necessary.
- Serve the cornmeal on a wide platter, making a well in the center.
- Spoon the chicken and its sauce over the cornmeal, allowing the flavors to meld together.
