Kül Böreği
Kül Böreği is a traditional Turkish pastry with a rich history connected to the ancient Ottoman Empire. Ingredients
- Flour - 500 grams
- Water - 250 ml
- Olive Oil - 50 ml

- Feta Cheese - 200 grams
- Parsley - 1 bunch
- Butter - 100 grams
- Onion - 1 large
- Black Pepper - To taste

Preparation
Preparing the Dough
- In a large mixing bowl, combine flour and salt. Gradually add water and olive oil, mixing continuously until a smooth dough forms.
- Knead the dough on a floured surface for about 10 minutes until it's elastic.
- Cover the dough with a damp cloth and let it rest for 30 minutes.
Preparing the Filling
- Finely chop the onion and fry in a pan with butter until translucent.
- In a bowl, crumble the feta cheese and mix it with chopped parsley, the fried onions, and season with black pepper.
Assembling the Börek
- Divide the dough into equal-sized balls and roll each one into a thin sheet on a floured surface.
- Place a scoop of the cheese filling onto each dough sheet and fold to create a half-moon shape.
- Seal the edges by pressing them with a fork to prevent the filling from spilling out.
Cooking
- Preheat the oven to 200°C (392°F).
- Place the börek on a baking sheet and brush them with beaten egg for a golden finish.
- Bake in the oven for about 25-30 minutes or until they are golden brown. You can use a cooking timer to avoid overbaking.
