Causa Limeña
Introduction to Causa Limeña
Causa Limeña is a vibrant and succulent dish that hails from the coastal regions of Peru. Known for its brilliant flavors and colorful presentation, it is a staple in Peruvian cuisine. The word "causa" carries a historical weight as it is said to have stemmed from the Quechua word "kausay," meaning life or sustenance. Traditionally prepared using potatoes as its base, this dish is a testament to the rich agricultural heritage of the Andes. Its vibrant layers often include avocado, lime, and various proteins.
Ingredients
- Potatoes - 1kg, preferably yellow potatoes
- Lime juice - from 3 fresh limes
- Yellow chili paste (ají amarillo) - 2 tablespoons
- Olive oil - 3 tablespoons
- Salt - to taste
- Pepper - to taste
- Tuna - 250g canned or freshly cooked
- Avocado - 2 ripe, sliced
- Mayonnaise - 1 cup
- Eggs - 2, hard-boiled and sliced
- Black olives - sliced, for garnish
- Parsley - finely chopped, for garnish
Preparation Steps
1. Preparing the Potatoes
Begin by peeling the potatoes and cutting them into equal-sized cubes. Make sure they are small enough to cook evenly.
2. Cooking the Potatoes
In a large pot of salted water, boil the potatoes until tender, approximately 15-20 minutes. Use a cooking timer to ensure they don't overcook. Once cooked, drain them and pass them through a potato ricer into a large bowl for a smooth, creamy texture.
3. Flavoring the Potato Mash
To the mashed potatoes, add the lime juice, yellow chili paste, olive oil, and season with salt and pepper to taste. Mix thoroughly to integrate all flavors into the mash.
4. Assembling the Causa Layers
- Take a mold or a ring and start with a layer of the potato mash at the bottom. Press firmly to even it out.
- Add a layer of tuna mixed with mayonnaise atop the mash.
- Place slices of avocado over the tuna layer.
- Repeat by adding another layer of potato mash.
- Finally, top the causa with slices of eggs, black olives, and sprinkle parsley as a garnish.
5. Chilling the Causa
Transfer the assembled causa to the refrigerator for at least 30 minutes for it to set properly, allowing all flavors to meld together. Using a cooking timer helps ensure it's perfectly chilled.
Serving Suggestions
Causa Limeña is best enjoyed cold, either as a main dish or a starter. Serve on a flat cold platter or individual plates. Enhance your service with a drizzle of extra olive oil or leftover yellow chili paste for an additional kick of flavor. Each bite should embody the zesty, savory, and fresh nature of the ingredients combined.
