Ingredients
- Chicken - 500g boneless, skinless, cut into cubes
- Soy Sauce - 4 tablespoons
- Ginger - 2 inches, grated
- Garlic - 4 cloves, minced
- Brown Sugar - 2 tablespoons
- Rice Vinegar - 3 tablespoons
- Green Onions - finely chopped, for garnish
- Sesame Oil - 2 tablespoons
- Cornstarch - 2 tablespoons
- Water - 1/4 cup, mixed with cornstarch for slurry
- Sesame Seeds - 1 tablespoon, toasted
- Red Chili Flakes - 1 teaspoon, optional for added heat
Preparation
Marinate the Chicken
Combine the chicken with soy sauce, ginger, garlic, and brown sugar in a large bowl. Toss well to ensure the chicken is evenly coated with the marinade. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
Prepare the Sauce
In a small mixing bowl, whisk together the rice vinegar, additional 2 tablespoons of soy sauce, and red chili flakes if using. Set aside for later use in the cooking process.
Cooking Process
- Heat a large skillet over medium-high heat and add the sesame oil. Once the oil is hot, add the marinated chicken and sauté for 5-7 minutes until browned and cooked through.
- Reduce the heat to medium and pour in the prepared sauce, stirring constantly to coat the chicken pieces.
- Combine the cornstarch with water in a small bowl to form a slurry. Gradually add the slurry to the chicken mixture, stirring as you do, until the sauce thickens.
- Cook for an additional 2-3 minutes, allowing the flavors to come together and the sauce to reach a glossy consistency. You can set a cooking timer not to overcook.
- Turn off the heat and let it rest for 2 minutes.
