Preparation
Marinating the Chicken
Begin by marinating the chicken with baharat spice mix, coriander powder, cumin powder, and a pinch of salt. Let it sit for at least half an hour to allow the flavors to penetrate the meat.
Preparing the Rice
Meanwhile, rinse the basmati rice in water until the water runs clear. Soak the rice in water for about 20 minutes and drain.
Cooking Process
Step 1: Preparing the Flavor Base
In a large pot, heat some oil over medium heat. Add chopped onion, garlic, and grated ginger. Sauté until the onions become translucent.
Step 2: Cooking the Chicken
Add the marinated chicken to the pot, browning it on all sides. Next, incorporate chopped tomato and continue to cook until the tomatoes break down and form a rich sauce.
Step 3: Simmering the Mixture
Add cardamom pods, a cinnamon stick, bay leaves, and black lime to the mixture. Pour in the chicken stock or water to cover the chicken and bring to a boil. Reduce the heat and let it simmer until the chicken is tender.
Step 4: Cooking the Rice
Once the chicken is done, remove it and set it aside. Add the soaked basmati rice to the remaining liquid in the pot. Check the seasoning, adding more salt or pepper if needed. Cover and cook until the rice is tender and fluffy, using a timer if necessary.
Step 5: Final Assembly
Once the rice is cooked, gently incorporate the previously cooked chicken back into the pot. Dissolve a pinch of saffron in warm water and drizzle it over the rice for added color and aroma.
