Milagu Kozhambu

Preparation
Step 1: Preparing the Tamarind Extract
Soak the tamarind in warm water for about 15-20 minutes. Once it softens, squeeze and extract the pulp. Set this aside as it will be the base for the kozhambu.
Step 2: Roasting and Grinding the Masala
- Heat a small pan and dry roast black pepper and toor dal until they turn golden and release a fragrant aroma.
- Allow the roasted mixture to cool before grinding it into a coarse powder.
Step 3: Preparing the Kozhambu
Heat sesame oil in a pan. Add mustard seeds and let them splutter. Add curry leaves and a pinch of asafoetida.
Now, add the prepared tamarind extract along with turmeric powder and salt to taste. Bring it to a gentle boil.
Add the roasted and ground black pepper and toor dal mixture to the boiling tamarind extract.
Allow it to simmer for about 15-20 minutes until the raw smell of tamarind disappears and the sauce thickens.
If needed, set a cooking timer to ensure proper cooking.
