Monegasque Salazón
The Monegasque Salazón is a traditional dish from the small, yet vibrant, Principality of Monaco. Nestled along the glamorous French Riviera, Monaco is famous for its rich cultural heritage and diverse culinary influences, owing largely to its strategic coastal position. Salazón, meaning 'salting' in Spanish, refers to the ancient practice of preserving food, particularly fish, by curing it with salt. This dish is a nod to Monaco's seafaring history and its connection to Mediterranean cuisine.
Ingredients
- Cod - 500g of fresh or salted cod
- Olive Oil - 2 tablespoons
- Garlic - 4 cloves, finely chopped
- Black Olives - 100g, sliced
- Capers - 2 tablespoons
- Lemon - 1, juiced
- Fresh Parsley - A handful, chopped
- Potatoes - 3 medium-sized, peeled and cubed
- Salt - To taste
- Pepper - To taste
Preparation Steps
If using salted cod, begin by soaking the fish in cold water for at least 24 hours to remove the excess salt. Change the water every 6-8 hours. This step is crucial to balance the flavors of the dish.
Dice the potatoes into small cubes and set aside. Finely chop the garlic and parsley.
Cooking Process
In a large skillet, heat the olive oil over medium heat. Add the garlic and sauté until fragrant, being careful not to let it burn.
Add the diced potatoes to the skillet and cook until they are tender and golden brown, stirring occasionally. This should take about 10-15 minutes. Use a cooking timer to keep track of the time.
Meanwhile, in another pot, bring water to a boil and cook the cod for 5-7 minutes until it's flaky and tender. Drain and gently break it into chunks.
Add the cod to the skillet with the potatoes and garlic, mixing gently to combine.
Stir in the black olives, capers, and the juice of the lemon. Season with salt and pepper to taste. Cook for an additional 5 minutes to meld the flavors.
Garnish with fresh parsley before serving.
How to Enjoy Monegasque Salazón
The Monegasque Salazón is best enjoyed as a part of a leisurely Mediterranean meal. Pair it with a crisp, chilled white wine, such as a Côtes de Provence, to complement the salty and savory notes of the dish. Typically, it's served alongside a simple green salad and some crusty bread to sop up the flavorful juices. This dish not only celebrates the rich maritime history of Monaco but also offers a taste of Mediterranean simplicity and elegance in every bite.
