Moti Pak is a rich, sweet delicacy renowned in Indian cuisine, often enjoyed during festivals and special occasions. Originating in Gujarat, Moti Pak is a delightful variation of the traditional barfi made by blending gram flour with ghee, sugar, and an assortment of nuts. The name "Moti Pak" translates to "pearl sweet," which is a nod to its smooth, silky texture and the luxurious feel it brings to the palate.
Ingredients
- Besan (Gram Flour) - 2 cups
- Ghee - 1 cup
- Sugar - 1 and 1/2 cups
- Milk - 1/2 cup
- Cardamom Powder - 1 teaspoon
- A pinch of Saffron strands
- Pistachios - 1/4 cup, chopped
- Almonds - 1/4 cup, chopped
- Cashews - 1/4 cup, chopped
- Edible Silver Leaf for decoration (optional)
Preparation
Step 1: Preparing the Saffron Milk
Begin by soaking a pinch of saffron in 2 tablespoons of warm milk. This will enhance the color and aroma of the Moti Pak. Allow it to soak for at least 20 minutes.
Step 2: Roasting the Besan
In a large, heavy-bottomed pan, heat ghee over a low flame. Once melted, add besan and continue stirring to avoid lumps. Cook for about 15-20 minutes until the besan turns golden brown and releases a nutty aroma. This process is vital to remove raw flavors from the besan.
Cooking Process
Step 3: Making the Sugar Syrup
Simultaneously, in another saucepan, add sugar and 1/2 cup of water. Cook until the sugar dissolves completely and achieves a one-string consistency. You can test this by carefully picking a drop of syrup between your thumb and forefinger. Once achieved, turn off the heat.
Step 4: Combining Ingredients
Carefully pour the sugar syrup into the roasted besan mixture, constantly stirring to mix well and prevent lumps. Gradually add the previously soaked saffron milk, continuing to stir until fully incorporated. Mix in the cardamom powder to infuse the sweet with a fragrant essence.
Step 5: Setting the Moti Pak
Once thoroughly mixed and you observe the ghee releasing from the sides, transfer the mixture into a greased tray or plate. Evenly spread using a spatula, ensuring the surface is smooth.
Top the mixture with chopped pistachios, almonds, and cashews for garnishing. Press lightly so they stick to the mixture. Optionally, you can use edible silver leaf for a royal touch.
Allow it to cool down and set completely, which could take around 1-2 hours at room temperature.
