Nguya is a traditional dish that originates from the diverse culinary landscape of West African countries. Preparation
Step 1: Marinating the Beef
Begin by marinating the beef cubes with salt, black pepper, and half of the ginger. Allow it to sit for at least 30 minutes.
Step 2: Preparing the Vegetables
While the beef marinates, wash and prepare the spinach, okra, and onions. Set aside.
Cooking Process
Step 1: Browning the Beef
In a large pot, heat the palm oil over medium heat. Add the onions and garlic, sautéing until golden brown. Add the marinated beef and brown on all sides.
Step 2: Building the Base
Stir in the remaining ginger and the pureed tomatoes. Let the mixture cook for about 10 minutes, allowing the flavors to blend.
Step 3: Simmering the Stew
Add the peanut butter and beef stock to the pot. Stir until well combined. Cover and let simmer for approximately 1 hour, or until the beef is tender.
Step 4: Adding the Vegetables
Add the okra and spinach to the pot. Stir well and let cook for another 15 minutes. Season with additional salt, black pepper, and chili powder if desired.
