Njeguški Steak
Njeguški Steak is a traditional dish hailing from Montenegro, specifically from the village of Njeguši. Known for its delicious flavors and rich history, this dish is a staple in Montenegrin cuisine. The steak is typically made with high-quality veal or pork, stuffed with Njeguški prosciutto and cheese, and then grilled or pan-fried to perfection. Njeguški prosciutto is a type of dry-cured ham, renowned for its unique taste, which comes from the climate of the Njeguši village.
Ingredients
- Veal cutlets - 4 pieces
- Njeguški prosciutto - 8 slices
- Cheese (such as Kashkaval or Parmesan) - 100 grams
- Butter - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Fresh parsley - for garnish
Preparation
Before we begin preparing the Njeguški Steak, it's important to gather all the necessary ingredients. This will make the cooking process smoother and more efficient.
Step 1: Preparing the Meat
- Start by taking the veal cutlets and gently pounding them with a meat mallet until they are about half an inch thick. This helps tenderize the meat and makes it easier to roll.
- Season both sides of the veal with salt and black pepper.
Step 2: Stuffing the Meat
- Lay two slices of Njeguški prosciutto on each veal cutlet.
- Grate the cheese and evenly sprinkle it over the prosciutto layers.
- Carefully roll the cutlets into a tight cylinder, ensuring the stuffing stays inside. Secure with toothpicks if necessary.
Cooking Process
Step 3: Searing the Steak
- Heat a skillet over medium-high heat and add olive oil.
- Once the oil is hot, add the rolled steak and sear each side for about 3-4 minutes, or until golden brown. This will help lock in the juices and flavor.
Step 4: Baking the Steak
- Preheat your oven to 350°F (175°C).
- Transfer the seared Njeguški Steak to a baking dish and dot with butter.
- Bake in the preheated oven for approximately 15-20 minutes. Use a cooking timer to ensure precise timing.
- After the steak is done, remove from the oven and let it rest for a few minutes before serving.
How to Enjoy Njeguški Steak
Njeguški Steak is best enjoyed hot, with a sprinkle of fresh parsley for garnish. It pairs wonderfully with mashed potatoes or a fresh salad. A glass of Montenegrin wine, such as Vranac, complements the flavors of this dish beautifully.
