Nungu Sherbet, also known as Ice Apple Sherbet, is a refreshing summer drink popular in South Indian states such as Tamil Nadu, Andhra Pradesh, and Kerala. The primary ingredient, Nungu, is the translucent, jelly-like fruit of the Palmyra palm tree, known for its cooling properties and hydrating benefits. Historically, this drink has been enjoyed for its ability to beat the tropical heat, thanks to its naturally sweet and pulpy texture that blends well into a rejuvenating sherbet.
Ingredients
- Nungu (Ice Apple) - 6 pieces
- Milk - 500 ml
- Sugar - 4 tablespoons
- Cardamom - 3 pods
- Rose Essence - 2 drops
- Ice Cubes - as required
- Chia Seeds - 2 tablespoons
Preparation
Step 1: Preparing the Nungu
Begin by peeling the Nungu to extract the juicy pulp. Carefully remove the thin, brown skin to reveal the translucent fruit inside. Each Nungu will usually yield a significant amount of flesh that contributes to the sherbet's delightful texture.
Step 2: Prepping the Chia Seeds
Soak the Chia Seeds in water for about 1 hour. This allows them to absorb water and expand, forming a kind of gel that blends beautifully with the sherbet, adding an interesting texture and making the drink more nutritious.
Cooking and Mixing Process
Step 3: Mixing the Ingredients
Pour the Milk into a large mixing bowl. Add Sugar and stir until it dissolves completely. Crush the Cardamom pods and sprinkle the powder into the milk mixture. Stir in the Rose Essence for a delicate floral fragrance that complements the sweetness of the Nungu.
