Introduction to Otak-Otak
Otak-Otak is a popular dish across Southeast Asia, especially in Indonesia, Malaysia, and Singapore. The name "Otak-Otak" stems from the Malay and Indonesian word for "brains", perhaps alluding to its soft, custardy texture. These flavorful fish cakes are traditionally made with a mix of fish paste, coconut milk, and a vibrant blend of spices. Grilled in banana leaves, they offer a smoky aroma and delectable taste that has enchanted locals and tourists alike. Ingredients
- Fish fillet (preferably mackerel or snapper) - 500g
- Coconut milk - 200ml
- Banana leaves for wrapping
- Spices - a blend of turmeric, chili, garlic, and ginger
- Salt - 1 tsp
- Sugar - 1 tsp
- Tapioca flour - 2 tbsp
Preparation
Step 1: Preparing the Fish Paste
Begin by thoroughly cleaning and patting dry the fish fillet. Cut it into smaller pieces and place it into a food processor. Add 200ml of coconut milk, and your blend of spices, which includes a teaspoon of turmeric, 2 chili peppers, 3 cloves of garlic, and a 2cm piece of ginger. Additionally, add 1 tsp of salt and 1 tsp of sugar. Blend these ingredients until you achieve a smooth consistency. Gradually add 2 tablespoons of tapioca flour to the mixture to help bind it together.
Step 2: Preparing the Banana Leaves
Take your banana leaves and cut them into small rectangles, approximately 15cm x 20cm. To soften the leaves and make them pliable for wrapping, blanch them briefly in hot water. This process also enhances the leaves’ aroma.
Step 3: Assembling the Otak-Otak
Place a spoonful of the fish paste mixture onto the center of each banana leaf. Fold the leaf over the mixture, securing the ends with toothpicks to form neat packets.
Cooking Process
Step 4: Grilling the Otak-Otak
Preheat your grill. Place the wrapped Otak-Otak on the grill and cook each side for about 5-7 minutes. You can set a cooking timer for precision. The banana leaves will char slightly, imparting a delightful smoky flavor to the dish.

If you prefer, you can steam the Otak-Otak instead. Place the wrapped parcels in a steamer and cook for about 10-15 minutes.
