Ingredients
- Mahi Mahi (1 lb, fresh or thawed)
- Olive Oil (2 tablespoons)
- Lime (1, juiced)
- Garlic (3 cloves, minced)
- Paprika (1 teaspoon)
- Cumin (1 teaspoon)
- Salt (to taste)
- Black Pepper (to taste)
- Flour Tortillas (8 small)
- Pineapple (1 cup, diced)
- Red Cabbage (1 cup, shredded)
- Cilantro (1/4 cup, chopped)
- Avocado (1, sliced)
- Jalapeño (1, sliced)
- Sour Cream (1/2 cup)
- Lime (1, for zest and garnish)
Preparation
1. Marinate the Fish
In a small bowl, mix olive oil, lime juice, garlic, paprika, cumin, salt, and black pepper. Coat the mahi mahi with the marinade and let it sit for at least 15 minutes to absorb all flavors.
2. Prepare the Salsa
In a medium bowl, combine pineapple, red cabbage, and cilantro. Mix in a pinch of salt and the zest of lime for extra flavor.
3. Cook the Fish
Preheat a grill or stovetop grill pan over medium-high heat. Cook the marinated mahi mahi for about 4-5 minutes on each side or until flaky and cooked through. You can use a cooking timer to ensure perfect doneness.
4. Prepare the Tortillas
Lightly warm the flour tortillas either on the grill for a smoky flavor or in a dry skillet.
5. Assemble the Tacos
Place slices of mahi mahi on each tortilla. Top with the prepared salsa, a few slices of avocado and jalapeño. Drizzle with sour cream to balance the spice and add tanginess.
