Pithla Khichdi Bites

Preparation
Step 1: Preparing the Rice and Moong Dal
Rinse rice and moong dal together until the water runs clear. Soak them in water for at least 30 minutes. This helps in faster cooking and better integration of flavors. After soaking, drain the water and keep aside.
Step 2: Making the Pithla
Start by finely chopping the onion, ginger, and green chilies. Heat 2 tablespoons of oil in a pan over medium heat. Add mustard seeds and let them splutter. Then add cumin seeds and a pinch of asafoetida. Stir in the chopped onion, ginger, and green chilies. Sauté until the onions become translucent. Mix in curry leaves and turmeric powder. Now, add the besan and roast for 2-3 minutes. Gradually add water and stir continuously to avoid lumps. Cook until the mixture thickens. Add salt to taste.
Step 3: Cooking the Khichdi Mixture
In a pressure cooker, add the drained rice and moong dal mixture. Add adequate water which is about twice the amount of rice and dal. Also, add a pinch of turmeric powder and salt. Close the lid and cook for about 3 whistles or until both rice and dal are well cooked and mushy.

Step 4: Combining the Pithla with Khichdi
Allow the pithla and khichdi to cool slightly. In a mixing bowl, combine the pithla and khichdi thoroughly to form a dough-like mixture. It should be easy to mold without being too sticky.
Step 5: Shaping the Bites
Take small portions of the mixture and shape them into bite-sized balls or squares. Ensure they are firm, as this helps in cooking evenly
Step 6: Frying the Bites
In a pan, heat enough oil for shallow frying. Once hot, reduce the flame to medium. Carefully place the shaped bites into the oil. Fry them until golden brown on all sides. Ensure they are cooked evenly, using a slotted spoon to turn them as needed.
Step 7: Garnishing
Remove the fried Pithla Khichdi Bites onto a paper towel to absorb any excess oil. Garnish with finely chopped coriander leaves for an added touch of freshness.
