Roshi Mas

Introduction to Roshi Mas

Roshi Mas is a quintessential dish from the Maldives, known for its aromatic and savory blend of spices combined with tender fish. This dish offers a glimpse into the Maldivian way of life, where the ocean's bounty is central to culinary traditions. Typically enjoyed with Roshi, a type of flatbread, Roshi Mas is both a daily staple and a celebration of flavors.

History of Roshi Mas

The Maldives, being an archipelago, has a rich history deeply connected with the sea. Over centuries, the Maldivian cuisine has evolved through influences from traders and travelers who brought their styles and spices. The adaptation of these influences is evident in Roshi Mas, which harmoniously balances local ingredients like coconut and curry leaves with spices such as turmeric and cumin.

Ingredients for Roshi Mas

Preparation Steps

  1. Marinate the Tuna: In a bowl, mix tuna cubes with turmeric and salt. Allow marinating for at least 15 minutes while you prepare other ingredients.

  2. Prepare the Aromatics: Chop the onion finely. Mince the garlic and grate the ginger. Slice the chilies.

Cooking Process

  1. Heat vegetable oil in a pan over medium heat.

  2. Add the chopped onion and sauté until it becomes translucent.

  3. Add the minced garlic, grated ginger, and chilies. Stir and cook for another 2-3 minutes.

  4. Add the curry leaves and stir them in.

  5. Add the marinated tuna to the pan and cook until the tuna turns opaque.

  6. Stir in the cumin and coriander powders.

  7. Pour the coconut milk into the pan. Bring the mixture to a simmer and reduce heat to low.

  8. Allow the Roshi Mas to simmer for around 10-15 minutes, letting the flavors meld. Ensure the fish is cooked through.

  9. Adjust seasoning with additional salt if necessary.

  10. You can use a timer to ensure perfect cooking.

Serving Roshi Mas

Roshi Mas is best enjoyed hot, accompanied by freshly made Roshi. This combination not only complements the flavors but also offers a traditional experience of the Maldivian meal. For a complete meal, you may include some fresh green salad and lime wedges on the side.

The dish can be garnished with extra curry leaves or sliced chilies to enhance its visual appeal and add a touch of freshness.
