Ingredients

- Egg - 1, beaten for egg wash
Preparation
Step 1: Prepare the Saltfish
Start by rinsing the saltfish thoroughly to remove excess salt. Soak it in water overnight, changing the water to further remove salt. After soaking, cook the saltfish in fresh water until tender. Drain and flake the fish using a fork. Set aside.
Step 2: Make the Pastry Dough
In a large bowl, combine the flour with butter, rubbing them together until the mixture resembles breadcrumbs. Gradually add cold water a tablespoon at a time until the dough holds together. Shape into a ball, wrap in plastic, and refrigerate for 30 minutes. Add milk for richness if desired.
Step 3: Prepare the Filling
Heat cooking oil in a pan over medium heat. Add onion and sauté until translucent. Stir in bell pepper, scotch bonnet, and garlic. Cook until peppers are soft. Add the flaked saltfish and season with thyme and black pepper. Mix well and let cool.
