- Onion - 1, finely chopped
- Garlic - 2 cloves, minced
- Parsley - 15g, chopped
- Cinnamon - 5g
- Paprika - 5g
- Cumin - 5g
- Black Pepper - 5g
Preparation
Step 1: Prepare the Dough
Begin by mixing flour and salt in a large bowl. Create a well in the center and gradually add water while mixing. Once combined, knead the dough for about 10 minutes until it becomes smooth and elastic. Add olive oil and continue kneading for another 5 minutes. Cover the dough with a damp cloth and let it rest for 30 minutes.
Step 2: Prepare the Filling
Heat a skillet over medium heat, then add olive oil to lightly coat the pan. Sauté the onion until translucent. Add garlic and continue to sauté for another minute. Add in the ground beef and cook until fully browned. Stir in parsley, cinnamon, paprika, cumin, and black pepper. Cook until well combined and fragrant. Remove from heat and allow the filling to cool.
Step 3: Assemble the Sfeha
Preheat your oven to 200°C (392°F). Roll out the rested dough on a floured surface to about 2mm thickness. Cut the dough into small circles using a round cutter or glass. Place a tablespoon of the meat filling in the center of each circle. Fold the edges toward the center to form a square shape with the filling exposed in the center.
Cooking Process
Line a baking tray with parchment paper and place the assembled Sfeha on the tray. Ensure they are spaced well apart. Bake in the preheated oven for about 15-20 minutes or until the dough turns golden brown. Monitor the cooking time closely to prevent burning.
