Ingredients
- Chicken - 500g, boneless and skinless
- Soy sauce - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Cornstarch - 2 tablespoons
- Sichuan peppercorns - 1 tablespoon, ground
- Chili peppers - 2, sliced
- Garlic - 4 cloves, minced
- Ginger - 1 tablespoon, minced
- Scallions - 2, chopped
- Peanut oil - 3 tablespoons
- Bell peppers - 1 red and 1 green, sliced
- Hoisin sauce - 2 tablespoons
- Sesame oil - 1 teaspoon
- Sesame seeds - 1 tablespoon
Preparation
Begin by marinating the chicken cubes with soy sauce, rice vinegar, and cornstarch for at least 30 minutes. This step ensures the meat is tender and flavorful. Prepare a spice mix by combining Sichuan peppercorns and chili peppers. Gather all the sliced bell peppers, minced garlic, ginger, and chopped scallions.
Cooking Process
- Heat a wok over medium-high heat and add peanut oil. Once hot, add the marinated chicken cubes. Stir-fry until slightly browned and then remove from the wok and set aside.
- In the same wok, add more peanut oil if necessary, followed by the minced garlic and ginger. Stir-fry until fragrant.
- Add the ground Sichuan peppercorns and sliced chili peppers to the wok, stirring briefly to release their aromas.
- Return the chicken to the wok, along with the sliced bell peppers and chopped scallions. Stir-fry everything together for 5-7 minutes until the vegetables are tender-crisp.
- Mix in the hoisin sauce and a touch of sesame oil, ensuring everything is well-coated with the sauce.
- Cook for an additional 3-4 minutes. Check the readiness by ensuring the chicken is cooked through, or use a cooking timer.
- Garnish with sesame seeds before serving.
