Ingredients
- Beef - cubed, about 500g
- Chicken - drumsticks or thighs, about 250g
- Okra - 100g, sliced
- Spinach - 200g, chopped
- Onions - 2 large, diced
- Tomatoes - 4, pureed
- Garlic - 4 cloves, minced
- Ginger - 2 tablespoons, grated
- Scotch Bonnet Pepper - 1, whole
- Palm Oil - 3 tablespoons
- Salt - to taste
- Black Pepper - 1 teaspoon
- Rice - for Anga, 500g
- Corn Flour - 2 tablespoons
- Water - as needed
- Stock - beef or chicken, about 1 liter
Preparation
Preparing the Beef and Chicken
Start by seasoning the beef and chicken with salt, black pepper, garlic, and ginger. In a large pot, heat the palm oil over medium heat. Brown the beef and chicken pieces on all sides, ensuring they are golden brown. Remove from the pot and set aside.
Preparing the Soup Base
In the same pot, add the onions and sauté until translucent. Add the pureed tomatoes and cook until the oil separates from the tomatoes. Return the browned beef and chicken to the pot and pour in the stock. Add the whole Scotch Bonnet Pepper and allow the mixture to simmer over low heat for 45 minutes, stirring occasionally.
Cooking Process
Making the Tabea Soup
Add the sliced okra and chopped spinach to the soup. Continue to simmer for another 15-20 minutes or until the vegetables are cooked and tender. Adjust the seasoning with more salt and black pepper as needed.
Preparing the Anga (Rice Dumplings)
While the soup simmers, prepare the rice by cooking it until soft. Allow it to cool slightly, then mash it into a smooth dough. Mix in the corn flour to help bind the mixture. Form small dumplings using your hands and set aside.
In a large pot of boiling water, cook the dumplings for about 10-15 minutes or until they float to the top.
