Ingredients
- Couscous - 200g
- Chicken Breasts - 2
- Biltong - 50g
- Peri-Peri Sauce - 100ml
- Bell Pepper - 1 large, diced
- Red Onion - 1, finely chopped
- Olive Oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Lemon - 1
- Cilantro - a small bunch, chopped
- Salt and Pepper - to taste
Instructions
Preparation
Start by preparing the couscous. Cook it according to package instructions. Generally, it involves adding an equal part of hot water and allowing it to sit until the water is fully absorbed.
While your couscous is sitting, take the chicken breasts and cut them into bite-sized pieces.
Squeeze the juice from one lemon over the pieces and let them marinate briefly with some salt, pepper, and peri-peri sauce.
Cooking
In a large pan, heat the olive oil over medium heat. Add garlic and red onion and sauté until they become fragrant.
Increase the heat and add the chicken pieces. Cook until they are browned on all sides.
Add the bell pepper to the pan and sauté for another 5 minutes.
Sprinkle the cooked couscous over the chicken, bell pepper, and onion mixture. Stir everything together so that the couscous absorbs all the flavors.
Add half of the chopped cilantro and mix them through the dish.
Finally, layer chunks of biltong on top of the dish. Cover the pan and allow it to sit for about 5 minutes on low heat to blend the flavors.
Serving and Enjoying
Remove the pan from the heat and let it rest for a couple of minutes before serving.
Squeeze additional lemon juice if desired, and garnish with the remaining cilantro.
Arrange the Table Mountain Fusion on a serving platter, serve hot, and enjoy this flavorful representation of cultural convergence.
