Tamal de Chiriquí
Introduction
Tamal de Chiriquí is a traditional dish from the Chiriquí province in Panama. This regional delicacy brings together the flavors of corn, pork, chicken, and local spices wrapped in banana leaves and steamed to perfection. Its history is deeply rooted in the cultural fusion of indigenous, Spanish, and African influences that have shaped Panamanian cuisine.
Ingredients
- Corn dough (masa) - 4 cups
- Pork meat - 500g
- Chicken - 500g
- Tomato - 3 large, chopped
- Onion - 2 large, chopped
- Garlic - 4 cloves, minced
- Bell pepper - 1 medium, chopped
- Cumin - 1 teaspoon
- Annatto - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Banana leaves - 6 large
- Vegetable oil - 4 tablespoons
- Chicken broth - 2 cups
- Olives - 1/2 cup, pitted and sliced
Preparation
Step 1: Prepare the Meats
Start by cooking the pork and chicken. Season both meats with salt and black pepper. In a large skillet, heat 2 tablespoons of vegetable oil over medium heat, and brown the meats on all sides. Remove from the skillet and set aside.
Step 2: Prepare the Sofrito
In the same skillet, add the remaining oil. Sauté the onion, garlic, and bell pepper until they are soft. Add the tomato, cumin, and annatto. Cook until the mixture thickens.
Step 3: Combine Meat with Sofrito
Return the browned pork and chicken to the skillet, add chicken broth, and let it simmer until the meat is tender and the flavors meld together. Chop the meats into bite-sized pieces before adding back to ensure easy eating.
Step 4: Prepare the Masa
Mix the corn dough (masa) with the chicken broth until you achieve a smooth consistency. The dough should be soft but not runny.

Step 5: Assemble the Tamales
Prepare the banana leaves by passing them quickly over an open flame to make them flexible. Place a leaf on a flat surface, and add a scoop of masa in the center. Top with mixed meats and a few olive slices.

In a large pot, arrange a steam rack or layer of leftover leaves, and place the tamales on top. Add water to the pot, ensuring it doesn't reach the tamales. Cover the pot and steam the tamales for about 1.5 to 2 hours. Use a cooking timer to ensure precise timing.
