Preparation
Step 1: Marinate the Chicken
Begin by marinating the chicken breast. In a bowl, mix the tamarind paste, a pinch of salt, cumin, and coriander powder. Add the chicken and coat it well. Let it marinate for at least 30 minutes.
Step 2: Prepare the Vegetables
While the chicken marinates, chop the bell pepper, and onion into strips. Mince the garlic and grate the ginger.
Step 3: Cook the Rice
Rinse the rice under cold water until the water runs clear. Cook it in a rice cooker or a saucepan with water, following the package instructions. Once cooked, keep it warm.
Cooking Method
Step 1: Sautéing the Ingredients
Heat the olive oil in a large pan over medium heat. Add the minced garlic and grated ginger, and sauté until fragrant.
Step 2: Cooking the Chicken
Add the marinated chicken breasts to the pan. Sear on both sides until golden brown. Remove from the pan and set aside.
Step 3: Cooking the Shrimp and Vegetables
In the same pan, add the shrimp and cook until they turn pink and are just cooked through. Remove and set aside. Add the bell pepper and onion to the pan, cooking until softened.
Step 4: Assemble the Dish
Return the chicken and shrimp to the pan. Pour in the coconut milk and let it simmer gently for about 10 minutes. Add lime juice and adjust seasoning with salt and pepper.
