Introduction and History

Ingredients
- Pastry dough (enough for a 9-inch tart)
- 2 large potatoes
- 200g cheese (preferably Gruyère or Reblochon)
- 100g bacon lardons
- 1 onion
- 2 eggs
- 200ml cream

- Pinch of nutmeg (optional)
Preparation
Step 1: Preparing the Pastry
Roll out the pastry dough and line a tart tin with it. Press the edges firmly and trim excess. Prick the bottom with a fork, cover with parchment, and fill with baking beans. Chill the lined tin while you prepare the filling.
Step 2: Prepare the Ingredients
Peel and thinly slice the potatoes. Cook in salted water until just tender, about 8–10 minutes. Drain and set aside. Dice the onion and cut the bacon into lardons.

Preheat your oven to 200°C (390°F). Beat the eggs with the cream, season with salt, pepper, and optional nutmeg. Spread the potatoes and bacon mixture over the pastry base. Pour over the egg mixture, then top with layers of cheese.
