Ingredients
- Fresh Prawns - 500 grams, debearded and cleaned
- Mussels - 300 grams, cleaned
- Firm White Fish Fillets - 250 grams, cubed
- Onion - 1 large, finely chopped
- Garlic - 3 cloves, minced
- Tomatoes - 3 medium, peeled and chopped
- Bell Pepper - 1 large, sliced
- Curry Powder - 2 tablespoons
- Coconut Milk - 400ml
- Fish Stock - 1 cup
- Oil - 2 tablespoons
- Salt - to taste
- Black Pepper - to taste
- Fresh Coriander - for garnish
Preparation
Step 1: Prepping the Seafood
Start by thoroughly cleaning the fresh prawns and mussels. Ensure all shellfish are debearded and scrubbed to remove any grit. Cube the fish fillets into bite-sized pieces, ensuring there are no bones left.
Step 2: Chopping and Marinating
Finely chop the onion and bell pepper. Peel and chop the tomatoes and mince the garlic. In a bowl, toss the seafood with curry powder, a pinch of salt, and black pepper. Let it marinate while you prepare the base of the stew.
Cooking Process
Step 1: Creating the Flavor Base
In a large pot, heat oil over medium heat. Add the chopped onion and sauté until translucent. Stir in the garlic and bell pepper, cooking them until they soften.
Step 2: Building the Stew
Stir the chopped tomatoes into the pot and let them simmer until they start breaking down. Pour in the coconut milk and fish stock, stirring to combine with the aromatics. Bring the mixture to a gentle boil.
Step 3: Cooking the Seafood
Add the marinated prawns, mussels, and fish to the stew. Cover and let it simmer on low heat for about 15-20 minutes, or until the seafood is cooked through. Occasionally stir to ensure even cooking.
Note:
Check the doneness of the seafood frequently. Overcooking can result in the prawns and fish becoming rubbery.
Step 4: Final Seasoning
Taste and adjust the seasoning with salt and black pepper as needed. Once the seafood is perfectly cooked, remove the pot from heat and let it sit for a few minutes.
Enjoying Umncimo
Umncimo is best enjoyed with a side of warm, crusty bread or steamed rice, which helps in soaking up the rich, flavorful broth. Garnish with fresh coriander before serving to add a burst of color and a hint of freshness.
For an authentic experience, pair with a glass of Chenin Blanc, a popular wine in South Africa that complements the dish's flavors beautifully. Alternatively, a refreshing local beer can also enhance the dining experience, particularly on a warm summer day.
To make the most of your Umncimo meal, set a cooking timer for each step of the recipe, ensuring that you stick to recommended cooking times and achieve the best results.
Storing and Reheating
Leftovers can be stored in an airtight container in the fridge for up to 2 days. Reheat gently on the stove to avoid overcooking the seafood upon serving again. Enjoy the comforting flavors of Umncimo even as leftovers!
