Valencian Orxata
Introduction to Valencian Orxata
Valencian Orxata, known as "Horchata de Valencia," is a refreshing traditional beverage originating from the Valencia region in Spain. Made from tiger nuts, it offers a sweet, nutty flavor unlike any other.
The history of orxata dates back to the ages of Arabic settlements in Spain, providing an essential glimpse into the region's culinary transformation through centuries. Revered both for its flavor and potential health benefits, orxata remains a beloved drink in Valencia and beyond.

- Lemon zest from one lemon
Preparation
Soaking the Tiger Nuts

Blending and Straining
- Drain the soaked tiger nuts and transfer to a blender.
- Add 500ml of water and blend until a smooth mixture forms.
- Using a cheesecloth or a fine sieve, strain the mixture into a large bowl or pitcher, squeezing tightly to extract as much liquid as possible.
Sweetening and Flavoring
- Mix the strained liquid with the remaining 500ml of water, sugar, cinnamon stick, and lemon zest.
- Stir well until the sugar completely dissolves. Adjust sweetness if necessary.
- Chill the orxata in the refrigerator for at least 2 hours before serving.
