Valenciano Ahumado Sabroso
The Valenciano Ahumado Sabroso, a deliciously hearty smoked dish inspired by the flavors of Spain, particularly the Valencia region, combines the essence of Spanish culinary heritage with an inventive twist. Often enjoyed during festive occasions, this dish represents a melding of local ingredients and traditional cooking techniques that create a unique and memorable flavor profile.
History and Description
Rooted in the cultural traditions of Valencia, known for its diverse and rich gastronomy, Valenciano Ahumado Sabroso draws inspiration from historical recipes passed down through generations. Valencia's proximity to both the coast and fertile lands allows for an abundance of fresh ingredients such as vegetables, rice, and seafood which are often incorporated into regional meals. This dish, however, focuses on the land's offerings, with a blend of meats, smoked techniques, and locally grown produce.
Its origins can be traced back to the blending of Iberian culinary influences and the Arab legacy that left a lasting impact on Spanish cuisine. Smoking, a method used to preserve meats, was skillfully adapted into modern cooking to enrich flavors, resulting in the sumptuous Ahumado Sabroso.

Preparation
Preparing the Ingredients
Begin by preparing all ingredients to streamline your cooking process. Ensure the Chicken is washed and cut into appropriate size pieces. Slice the Chorizo, and mince the Garlic. Finely chop the Onions, slice the Red Bell Pepper, and chop the Tomatoes into fine pieces.
Marinating the Chicken
To infuse flavors deeply, marinate the Chicken pieces with Paprika, a touch of Salt, and a few crushed cloves of Garlic. Allow it to rest for at least 30 minutes.
Cooking Process
Heat Olive Oil in a large paella pan or a wide heavy skillet over medium heat. Add the marinated Chicken pieces and cook until they are browned on all sides. Remove and set aside.
In the same oil, sauté the sliced Chorizo until it releases its oils and crisps slightly. Add in the remaining Garlic, Onions, and Red Bell Pepper, and cook until the vegetables have softened.
Stir in the chopped Tomatoes, and allow them to cook down until they form a rich, thick sauce.
Return the Chicken pieces to the pan, and sprinkle over the Thyme and Bay Leaves.
Poor in the Rice, making sure it is evenly distributed in the pan. Allow it to coat completely with the existing juices and oils.
Gently pour in the warmed Chicken Broth, ensuring the Rice stays evenly spread and undisturbed. Add a pinch of Saffron for both color and flavor.
Season with Salt and Black Pepper to taste.
Let the mixture cook uncovered over medium heat for about 15-20 minutes. As the Chicken Broth absorbs, monitor the Rice's consistency to ensure it doesn’t overcook while adjusting heat as needed.
Lower the heat until its lowest setting and cover the pan, allowing it to continue cooking until the Rice is fully tender and the dish is aromatic, which typically takes an additional 5-10 minutes. Add a link for cooking timers to track time precisely.
Turn off the heat, remove the cover, and let the dish sit for a few minutes before garnishing with fresh Parsley.
Enjoying the Meal
Valenciano Ahumado Sabroso is best enjoyed with a slice of crusty bread to mop up the savory juices and can be paired perfectly with a glass of full-bodied red wine, such as a robust Tempranillo. Serve hot, making sure each plate gets a bit of everything for a well-rounded taste experience. For added authenticity, dine in a relaxed atmosphere that captures the essence of Spanish hospitality, perhaps with traditional Spanish music playing softly in the background.
