Bánh Bột Lọc
Bánh Bột Lọc is a traditional Vietnamese dumpling known for its translucent appearance and chewy texture. Originating from the central region of Vietnam, particularly in the city of Hue, these dumplings encapsulate the flavors of the region. They are typically filled with shrimp and pork belly and wrapped in banana leaves, then steamed to perfection, offering a delightful combination of savory and umami flavors.
Ingredients
- Tapioca Starch - 200 grams
- Shrimp - 150 grams, peeled and deveined
- Pork Belly - 100 grams, diced
- Banana Leaves - for wrapping
- Frying Oil - 2 tablespoons
- Fish Sauce - 3 tablespoons
- Salt - 1 teaspoon
- Sugar - 1 teaspoon
- Ground Black Pepper - 1/2 teaspoon
- Green Onions - finely chopped, for garnish
Preparation
Step 1: Prepare the Dough
Start by preparing the dough. In a large bowl, mix tapioca starch with a pinch of salt. Pour in 150ml of boiling water slowly, and knead the mixture until it forms a smooth and supple dough. Cover the dough with a damp cloth and let it rest for about 15 minutes. This resting period is crucial for achieving the desired chewy texture in the final dumpling.
Step 2: Prepare the Filling
While the dough rests, prepare the filling. Heat frying oil in a pan over medium heat. Add the diced pork belly and stir-fry until lightly browned. Follow with the shrimp and continue to cook until fully done. Season the mixture with fish sauce, sugar, and ground black pepper. Let the filling cool before assembling.
Step 3: Wrap the Dumplings
Clean and cut the banana leaves into 15cm squares and briefly dip them in hot water to make them pliable. Take a small portion of dough (about a tablespoon), flatten it in your palm, and place a teaspoon of the filling in the center. Fold the dough over to encase the filling, forming a small dumpling. Wrap the dumpling in the banana leaf, folding and securing the ends tightly.
Cooking Process
Step 4: Steam the Dumplings
Arrange the wrapped dumplings in a steamer. Allow them to steam for about 20 minutes, checking periodically. You can use a cooking timer for accuracy. The Bánh Bột Lọc is done when the dough becomes translucent, revealing the filling inside.
Step 5: Serve
Once cooked, remove the Bánh Bột Lọc from the steamer and allow them to cool slightly. They can be served hot or at room temperature. Garnish with finely chopped green onions for added flavor.
