Preparation Steps
Prepare the Callaloo Leaves
Start by thoroughly washing the callaloo leaves to remove any dirt or grit. If you are using spinach as a substitute, follow the same process. Remove the tougher stems to ensure a smooth texture in the soup.
Chop the Vegetables
Chop the onion and dice the red bell pepper. Slice the okra into thin rounds. Mince the garlic
Cooking Instructions
Sauté the Aromatics
In a large pot, heat a tablespoon of oil over medium heat. Add the onion and garlic, sautéing until they become translucent. This step helps to release the flavors and aromatic qualities of the ingredients.
Add the Vegetables and Stock
Add the prepared callaloo (or spinach), sliced okra, and diced red bell pepper. Pour in the water or vegetable stock to cover the vegetables, and add the Scotch bonnet pepper and thyme sprigs. Season with salt and black pepper to taste.
