Preparation Steps
Step 1: Preparing the Meats
Begin by seasoning the lamb shank and chicken thighs with salt, pepper, and cumin. Heat a large pot over medium-high heat and add olive oil. Brown the meats on all sides. Remove and set aside.
Step 2: Cooking the Aromatics
In the same pot, add more olive oil if needed, then sauté the onion and garlic until soft and fragrant. Stir in harissa, allowing it to release its flavors, before adding a few saffron threads for aroma.
Step 3: Cooking the Vegetables
