Background and History
The Fez Enchantment is a traditional dish inspired by the rich and diverse culinary heritage of Morocco's ancient city of Fez. Ingredients
- Chicken - 1 whole, approximately 1.5 kg, cleaned and cut into pieces
- Onions - 2 large, finely chopped
- Garlic - 4 cloves, minced
- Ginger - 1 tablespoon, fresh and grated
- Saffron - 1/2 teaspoon threads, soaked in warm water
- Cinnamon - 1 stick
- Coriander - 1 teaspoon, ground
- Cumin - 1 teaspoon, ground
- Paprika - 1 teaspoon, sweet
- Olive Oil - 3 tablespoons
- Lemon - 1, juiced
- Almonds - 1/2 cup, blanched and toasted
- Honey - 2 tablespoons
- Dried Apricots - 1 cup
- Water - as needed for soaking and cooking
- Salt - to taste
- Black Pepper - to taste
- Couscous - 2 cups
- Parsley - 1/4 cup, fresh and chopped
- Cilantro - 1/4 cup, fresh and chopped
Preparation
Before you start cooking, prepare all your ingredients to ensure a smooth cooking process. Begin by soaking the dried apricots in warm water for about 30 minutes until they become plump. At the same time, soak the saffron threads in a small amount of warm water to release its color and aroma. Toast the almonds in a dry pan over medium heat until golden brown, then set aside to cool.
Cooking Process
Step 1: Marinate the Chicken
In a large bowl, combine the chicken pieces with onions, garlic, ginger, coriander, cumin, paprika, lemon juice, olive oil, salt, and black pepper. Allow it to marinate for at least one hour or overnight in the refrigerator for best results.
Step 2: Cooking the Chicken
Heat the remaining olive oil in a large tagine or heavy-bottomed pot over medium heat. Add the marinated chicken along with all the marinade juices. Cook until the chicken is browned on all sides, about 10-15 minutes. Add the soaked saffron and its soaking water, cinnamon stick, and additional water to cover the chicken halfway. Bring to a simmer, cover, and let it cook for 45-50 minutes or until the chicken is tender and thoroughly cooked.
Step 3: Preparing the Sauce
Remove the chicken pieces from the pot and keep warm. Add the soaked apricots, honey, and any remaining lemon juice to the pot. Stir well and cook for another 10-15 minutes until the sauce thickens and the flavors meld beautifully.
Step 4: Cooking the Couscous
While the sauce is reducing, prepare the couscous according to package instructions or until fluffy and light. Mix in the chopped parsley and cilantro for added freshness.

To serve, place the fluffy couscous on a large serving platter. Arrange the cooked chicken pieces over the couscous and generously spoon the aromatic sauce and apricots over the top. Garnish with the toasted almonds and additional fresh parsley and cilantro.
