Jalisco Fondido
Jalisco Fondido is a traditional Mexican dish that's known for its rich flavors and creamy textures. Originating from the Jalisco region, this dish beautifully combines local ingredients like cheese, chorizo, and peppers. Fondido directly translates to "melted", which perfectly describes the gooey cheese central to this dish. Traditionally served as an appetizer, it's perfect for sharing with friends and family. The vibrant history of Jalisco, home to mariachi music and tequila, is reflected in this deeply satisfying dish.
Ingredients
- Chorizo - 200g, sliced
- White onion - 1, chopped
- Jalapeno - 1, diced
- Garlic clove - 1, minced
- Tomato - 2, chopped
- Oregano - 1 tsp, dried
- Monterey Jack cheese - 500g, shredded
- Olive oil - 2 tbsp
- Salt - to taste
- Tortilla chips - for serving
- Lime - wedges for garnish
- Cilantro - fresh leaves for garnish
Preparation
First, prepare all your ingredients by slicing the chorizo, chopping the onion, dicing the jalapeno and tomatoes, and mincing the garlic. Make sure to shred the Monterey Jack cheese finely, to ensure it melts evenly.
Cooking Process
In a skillet, heat the olive oil over medium heat.
Add the chorizo and cook until it starts to brown and releases its oils.
Add the onions and sauté until translucent.
Stir in the garlic and jalapeno, cooking for another 2 minutes.
Add the tomatoes and oregano, season with salt, and cook until the tomatoes have softened.
Reduce the heat and slowly add the Monterey Jack cheese to the skillet, stirring continuously to blend with the other ingredients.
Continue stirring until the cheese has completely melted into a smooth, creamy sauce. This should take about 5-7 minutes. Keep an eye on the cooking timer to ensure you don't overcook the cheese.
Once smooth, remove from heat and transfer the fondido into a serving dish.
Serving Suggestions
Garnish the fondido with fresh cilantro leaves and serve it immediately with a side of tortilla chips. Squeeze fresh lime wedges over the fondido to add a zesty contrast to the creamy, spicy cheese blend.
