This mixed cultural hub is known for its eclectic food scene which beautifully represents South Africa’s rich mosaic of people and flavors. Jozi Bites capture this essence, merging local ingredients with global influences for a street-food-style experience right at your table.
History of Jozi Bites
The inspiration behind Jozi Bites comes from the bustling streets of Johannesburg, where vendors serve a medley of flavors influenced by diverse cultures, from traditional African fare to Indian and European influences. In creating Jozi Bites, the goal was to pay homage to these flavors, while celebrating the rich history and diversity of South African cuisine.
Ingredients
- Chicken Breast - 500g, diced
- Garlic - 2 cloves, minced
- Ginger - 1 tablespoon, grated
- Curry Powder - 2 tablespoons
- Yogurt - 200 ml
- Lemons - 2 for juice and zest
- Onions - 1, finely chopped
- Coriander - 1 bunch, chopped
- Red Chillies - 2, finely sliced
- Paprika - 1 tablespoon
- Pita Bread - 6 pieces
- Salt - to taste
- Pepper - to taste
- Olive Oil - 2 tablespoons
Preparation
Step 1: Marinate the Chicken
In a large bowl, combine the yogurt, juice and zest of lemons, ginger, garlic, curry powder, paprika, and a pinch of salt and pepper. Stir well to form a flavorful marinade. Add the diced chicken breast and mix until the pieces are well-coated. Cover and refrigerate for at least 30 minutes, or overnight for best results.
Step 2: Prepare the Pita Bread
While the chicken marinates, prepare the pita bread. Warm the pitas in a preheated oven at 180°C (350°F) for about 5 minutes, or until they are soft and pliable.
Step 3: Cooking the Chicken
Heat olive oil in a large pan over medium heat. Add the chopped onions and red chillies, sautéing for about 2 minutes until the onions are soft and translucent. Add the marinated chicken breast to the pan and cook, stirring occasionally, until the chicken is cooked through and golden brown. This should take about 10-12 minutes. Make sure the internal temperature of the chicken reaches 165°F (74°C), referring to a cooking timer for precision if needed.
Serving the Jozi Bites
To assemble the Jozi Bites, slice each pita bread into quarters. Place a generous portion of the cooked chicken onto each pita, sprinkle with freshly chopped coriander, and serve with a side of lemon wedges for an extra zing.
