Ingredients
- 6 cups finely grated cassava (well-drained)
- 1 can (14 oz / 400 ml) coconut milk

- 4 tbsp melted butter
- 2 large eggs
- 1 tsp vanilla extract

- 1 pliable banana leaf (optional, for lining)
Preparation
- Prepare the pan: If using a banana leaf, rinse and briefly warm it over low heat or in a dry skillet until flexible, then line a 9-inch square baking pan. Lightly brush the surface with oil. If not using a leaf, grease the pan with oil.
- Ready the base: Peel and grate the cassava finely. Gather the grated cassava in a clean towel and squeeze out excess moisture for a custardy yet well-set crumb.
- Melt the fat: Gently melt the butter and let it cool slightly so it doesn’t scramble the eggs later.
- Heat the oven: Preheat to 350°F (175°C) and position a rack in the center.
- Build the batter, part 1: In a large bowl, whisk the eggs with the sugar and salt until glossy and slightly thickened.

- Combine: Fold in the grated cassava and the baking powder (if using). Stream in the melted butter and fold just until evenly incorporated.

Cooking
- Bake: Set the pan on the center rack and bake until the top is lightly golden and a tester comes out mostly clean, about 45 to 55 minutes.
- Cool: Let the cake rest in the pan for 15 minutes, then lift or turn it out to a rack to cool until just warm.
