The Kraton Indulgence is a regal dish inspired by the opulent feasts of ancient Javanese palaces. Ingredients
- Jasmine Rice - 2 cups
- Coconut Milk - 400 ml
- Galangal - 1 thumb-sized piece, smashed

- Turmeric - 1 teaspoon, ground
- Chicken Breast - 500 grams, cubed
- Peanuts - 100 grams, roasted
- Tamarind Paste - 2 tablespoons
- Palm Sugar - 1 tablespoon, shaved
- Garlic - 4 cloves, minced
- Shallots - 3, thinly sliced
- Bok Choy - 2 bunches, chopped
- Red Chili Peppers - 2, sliced
- Salt - to taste
- Pepper - to taste
- Oil - 2 tablespoons
- Water - as needed
Preparation
- In a large pot, combine Jasmine Rice with Coconut Milk, Galangal, Lemongrass, and Kaffir Lime Leaves. Add a pinch of Salt and bring to a boil.
- Once boiling, reduce the heat to low and cover. Cook for 15-20 minutes or until the rice is tender. Set aside.
