- Salt - 1 teaspoon
- Vegetable Oil - 2 tablespoons
- Potatoes - 4 large
- Butter - 3 tablespoons
- Milk - 1/2 cup
- Onion - 1 small
- Black Pepper - to taste
Preparation of the Dough
- In a large mixing bowl, combine flour and salt.
- Add warm water and vegetable oil to the flour mixture.
- Knead the mixture until a smooth dough forms. This should take about 10 minutes of steady kneading.
- Cover the dough with a damp cloth and let it rest for at least 30 minutes to allow the gluten to develop.
Preparing the Filling
- While the dough rests, peel and chop the potatoes, then place them in a saucepan filled with water.
- Boil until the potatoes are tender, approximately 15 minutes. Use a cooking timer for precision.
- Drain the potatoes and mash them in the saucepan.
- Add butter, milk, and stir to make a creamy consistency.
- Finely chop the onion and sauté in a skillet with a tablespoon of vegetable oil until golden brown. Add to the mashed potatoes.
- Season with salt and black pepper to taste. Mix well.
Cooking the Kystyby
- Divide the dough into small, equal portions about the size of a golf ball.
- Roll each portion into a thin circle on a floured surface, approximately 1/8 inch thick.
- Preheat a non-stick skillet over medium heat.
- Cook each flatbread in the hot skillet for about 2-3 minutes on each side, or until light golden spots appear.
- Once the flatbreads are cooked, place a generous amount of the potato filling on one half of the flatbread.
- Fold over the other half to create a semi-circle.
How to Enjoy Kystyby
Kystyby is best enjoyed warm, freshly cooked as the flavors meld together perfectly. Traditionally, it is served with tea or a light soup to complement its hearty nature. The soft, comforting texture of the [potato filled] pancakes provides a satisfying meal, whether eaten on its own or as part of a larger spread of traditional Tatar dishes. For those desiring a richer taste, additional butter can be brushed on the surface of the flatbread just before serving.
