Ingredients for Marrakech Enthrallment
- Chicken - 1.5 kg, cut into pieces
- Onion - 2 large, finely chopped
- Garlic - 4 cloves, minced
- Olive Oil - 4 tablespoons
- Cinnamon - 1 teaspoon
- Cumin - 1 teaspoon
- Saffron - a pinch, soaked in warm water
- Ginger - 1 teaspoon, ground
- Salt - to taste
- Black Pepper - to taste
- Almonds - 100 grams, blanched and toasted
- Dried Apricots - 150 grams, soaked in warm water
- Honey - 2 tablespoons
- Lemon - 1, juiced
- Fresh Coriander - for garnish, chopped
Preparation Steps
To start, rinse the chicken pieces under cold water and pat dry.
In a large bowl, combine cinnamon, cumin, ginger, salt, and black pepper to create a spice blend. Rub this mixture onto the chicken pieces and let them marinate for at least 1 hour in the fridge.
Heat olive oil in a large tagine or heavy-bottomed pot over medium heat. Add the onions and garlic, sauté until golden brown.
Cooking Process
Add the marinated chicken pieces to the pot, browning them on all sides.
Pour in the saffron water, ensuring that the threads are spread evenly across the dish.
Lower the heat to a simmer and cover the pot with a lid. Cook for about 45 to 50 minutes or use a cooking timer to ensure the chicken is tender and fully cooked.
While the chicken is cooking, prepare the apricots by draining them and mixing with honey. Add this mixture into the pot with the chicken during the last 10 minutes of cooking for a sweet finish.
Toast the almonds until golden and set aside for garnish.
Serve and Enjoy
Once the chicken is cooked, transfer it to a serving platter. Drizzle with the remaining sauce from the pot. Scatter the toasted almonds and fresh coriander over the top for added texture and flavor. A squeeze of fresh lemon juice brings a bright note to this savory and sweet dish. Serve with warm homemade bread or couscous to soak up the flavorful sauces and relish the authentic Moroccan dining experience.
Enjoy this aromatic meal with friends and family, accompanied by traditional Moroccan mint tea for an authentic and enthralling dining adventure.
