Preparation
First, take the lamb pieces and pat them dry with paper towels. Season them with salt and pepper. Heat the olive oil in a large pot over medium-high heat. Add the lamb pieces in batches, browning them on all sides. Once they are browned, transfer the lamb to a plate.
In the same pot, reduce the heat to medium. Add the onions and cook them until softened and translucent, which should take about 5 minutes. Add in the garlic and ginger, cooking for an additional 2 minutes until they release their aromas. Stir in the cumin, coriander, and cinnamon.
Cooking Process
Return the lamb to the pot, ensuring that all pieces are well-coated with the spice mix. Pour in the chicken stock, ensuring the lamb is almost submerged. Add the tomatoes and a pinch of saffron. Bring the mixture to a simmer.
