Paprikás Csirke
About Paprikás Csirke
Paprikás Csirke, or Chicken Paprikash, is a traditional Hungarian dish known for its rich flavor and creamy paprika sauce. Often considered a quintessential comfort food in Hungary, this dish has its origins rooted deeply in the country's history, dating back to the 19th century. It represents the marriage of various culinary influences, including the introduction of paprika to Hungarian cuisine in the 16th century. Paprika itself has evolved from a simple seasoning to a symbol of Hungarian culinary identity, revered for its ability to transform simple ingredients into heartwarming meals.
Ingredients
- Chicken Legs - 4, bone-in and skin-on
- Onion - 2 large, finely chopped
- Garlic - 3 cloves, minced
- Paprika - 3 tablespoons, preferably sweet Hungarian paprika
- Tomato - 1 large, chopped
- Bell Pepper - 1, diced
- Sour Cream - 1 cup
- Chicken Broth - 1 cup
- Flour - 2 tablespoons
- Vegetable Oil - 2 tablespoons
- Salt - to taste
- Black Pepper - to taste
Preparation Steps
- Season the chicken legs with salt and pepper. In a skillet, heat the vegetable oil over medium heat. Sear the chicken, skin side down, until golden brown, about 5 minutes per side. Remove and set aside.
- In the same skillet, add the chopped onions and cook until soft and translucent. Stir in the garlic and cook for another minute.
- Add the bell pepper and tomato, cooking until they begin to soften.
- Reduce the heat to low, and stir in the paprika. Cook for about 2 minutes, being careful not to burn the paprika.
- Return the chicken to the skillet. Pour in the chicken broth, bringing it to a gentle simmer. Cover and cook until the chicken is tender, approximately 25-30 minutes. Use a cooking timer to keep track.
- In a small bowl, mix the flour with the sour cream until smooth. Gradually add a few tablespoons of the hot liquid from the skillet to the sour cream mixture to temper it, then slowly stir it back into the skillet.
- Simmer uncovered for another 5-10 minutes until the sauce thickens. Adjust seasoning with additional salt and pepper if needed.
