Tilachi Poli
Introduction
The Tilachi Poli, also known as Sesame Jaggery Flatbread, is a traditional Indian sweet delicacy often prepared during the auspicious festival of Makar Sankranti. Ingredients

Preparation
Step 1: Prepare the Dough
In a mixing bowl, combine wheat flour, a pinch of salt, and 1 tablespoon of ghee. Mix well, then slowly add water little by little. Knead the mixture into a soft dough. Cover the dough with a damp cloth and let it rest for about 30 minutes. This resting period helps the dough to become elastic, making it easier to roll out later.
Step 2: Prepare the Filling
Dry roast the sesame seeds on a medium flame until they turn golden brown and start to pop. Be cautious not to burn them, as this would lead to a bitter taste. Once roasted, allow them to cool slightly. In a separate pan, add another tablespoon of ghee and the jaggery. Stir continuously on low flame until the jaggery melts completely. Add the roasted sesame seeds and cardamom powder to the melted jaggery, mixing thoroughly until everything comes together into a thick, uniform mixture. Let it cool enough to handle.
Cooking Process
Divide the rested dough into small, equal portions. Similarly, make small balls of the sesame-jaggery filling. Take one portion of the dough and flatten it slightly. Place a ball of filling in the center, then gently fold and seal the edges over the filling ball, ensuring it is completely enclosed. Carefully roll out the filled dough on a lightly floured surface to form a thin circle, similar to a pancake or tortilla. Heat a non-stick pan or griddle over medium heat. Place the rolled-out poli on the pan and cook for 1-2 minutes on one side until light brown spots appear. Flip and cook the other side. Add a little ghee around the edges to aid in the cooking and add flavor. Repeat for the remaining dough and filling portions. Use a cooking timer as necessary to ensure each side is cooked adequately.
