Varutha Kozhi, also known as fried chicken in South India, is a traditional dish that boasts rich flavors and an aromatic blend of spices. Ingredients
- Chicken - 1 kg, cut into pieces
- Onion - 2 large, finely sliced
- Garlic - 6 cloves, minced
- Ginger - 1-inch piece, minced
- Turmeric powder - 1 teaspoon
- Chili powder - 2 teaspoons
- Coriander powder - 1 tablespoon
- Garam masala - 1 teaspoon
- Curry leaves - A handful
- Salt - To taste
- Oil - For frying
- Lemon - 1, cut into wedges
Preparation
The key to a perfect chicken fry lies in its marination. Begin by washing the chicken pieces thoroughly. In a large bowl, add chicken, turmeric powder, chili powder, coriander powder, garam masala, minced garlic and ginger, a pinch of salt, and a few curry leaves. Mix well to ensure that each piece of the chicken is coated with the spice mixture. Cover the bowl and allow it to marinate for at least 2 hours in the refrigerator, or overnight for best results.
Cooking Process
Heat oil in a large pan suitable for deep frying. Once hot, add the marinated chicken pieces. Be cautious of oil splatters and ensure not to overcrowd the pan as it may reduce the temperature of the oil. Fry the chicken in batches if needed. Fry until the chicken turns golden brown and crispy. This should take around 8-10 minutes per batch. Ensure that the chicken is cooked thoroughly by checking that the juices run clear or using a cooking timer.
Once fried, remove the chicken pieces and let them drain on paper towels to remove excess oil. In a separate pan, use a bit of the residual oil and fry the sliced onions until golden brown. Add the rest of the curry leaves and fry until crisp. Garnish the fried chicken with the fried onions and curry leaves.
