Ingredients

- Green onions - 2, chopped
- Soy sauce - 1 tablespoon

Preparation
Before starting the cooking process, ensure that all the ingredients are prepped and ready to go. Rice should already be cooked and cooled, preferably prepared the day before to obtain the best texture when fried. If you're using fresh shrimp, make sure they are peeled and deveined. Dice the ham and carrots, beat the eggs, and chop the green onions.
Cooking Process
- Heat 1 tablespoon of oil in a large wok or skillet over medium-high heat.
- Add the beaten eggs and scramble until just set. Remove from the wok and set aside.
