Cusco Ceviche Bites
Introduction
Ceviche is a dish that showcases the vibrant culinary traditions of South America, particularly Peru. Hailing from the mountainous region of Cusco, this variation blends the freshness of the sea with the rich heritage of Andean flavors. Traditionally, ceviche involves marinating fish in lime juice, allowing the acidity to "cook" the fish. The Cusco Ceviche Bites are a modern twist on this classic, offering a bite-sized experience perfect for appetizers or parties.
Ingredients
- Fish - 500g of fresh, firm white fish like sea bass or tilapia
- Lime - 10 limes, juiced
- Red Onion - 1 medium, finely sliced
- Sweet Potato - 1 large, boiled and cubed
- Corn - 1 cob, boiled and kernels removed
- Aji Amarillo Paste - 2 tablespoons
- Cilantro - A handful, chopped
- Salt - To taste
- Pepper - To taste
Preparation
Step 1: Prepare the Fish
Begin by rinsing the fish under cold water. Pat it dry with a paper towel. Using a sharp knife, cut the fish into small, bite-sized cubes. Ensure each piece is of uniform size to guarantee even "cooking".
Step 2: Marinate the Fish
In a large glass bowl, combine the cubed fish with the lime juice. Stir to ensure every piece is submerged. Cover the bowl with plastic wrap and refrigerate for at least 15 minutes, or until the fish becomes opaque - indicating it's "cooked". Use a cooking timer to track the marination time.
Step 3: Prepare the Other Ingredients
While the fish marinates, prepare the accompanying ingredients. Slice the red onion thinly, boil and cube the sweet potato, and strip the kernels off the boiled corn cob.

Step 4: Mix the Ceviche
Once the fish is done marinating, drain it from the lime juice, discarding the liquid. Add the chopped cilantro, red onion, sweet potato, corn, and aji amarillo paste to the bowl. Gently mix everything together, taking care not to break the delicate pieces of fish. Season with salt and pepper to taste.

The combination of the spicy aji amarillo paste, the sweetness of the sweet potato, and the tender "cooked" fish creates an explosion of flavors that pays homage to Peru's diverse ingredients and bold culinary heritage.
